Our cheeses are made from the freshest milk possible. The milk used at Smith’s Country Cheese comes directly from our own dairy herd of 200 Holsteins. Our cows are milked, by machine, twice per day. Because we use raw milk (not pasteurized), a 60 day self-pasteurizing, aging period provides ample time for ripening and flavor enhancement. When the cheese has matured to 60 days, it is packaged, labeled and ready for sale! Our Gouda rivals any made in the Netherlands. It has the same mild taste, creamy texture and small, bubbly eyes. Ackermann Maple Farm
Since the spring of 2013, Ian and Caitlin Ackermann have been producing maple syrup on their land in the hills of Cabot, Vermont. After buying their first 26 acres in 2012, they have expanded to 148 acres, with over 10,000 maple trees. They use a wood fire to boil the sap into syrup, and package in all glass, keeping as sustainable as possible. They have been attending 10 farmers' markets a week for the past five years, spreading their maple products around Massachusetts. Nashoba Brook Bakery
Nashoba Brook Bakery opened for business on September 11, 1998 in an old warehouse in Concord, Massachusetts on the banks of the Nashoba Brook, a tributary of the Assabet River by Stuart Witt and John Gates. All of their breads use the "Slowrise" technique of baking. "Slowrise" is one way of saying that the doughs they mix and the breads they bake owe much of their glossy, web-like texture to the mellow leavening action of the sourdough starter created from local, wild Concord grapes by Stu Witt, Co-founder and Head Baker of Nashoba Brook Bakery. Their breads take almost 24 hours from mixing to cooling, and that long slow development results in delicious, nutritious and easy to digest breads.
DaSilva Farms
DaSilva Farm was started in 2015 by husband and wife, Joshua & Felicia DaSilva. They have recently moved their farm operation from Berkley, MA to Cloverbud Ranch in Portsmouth, RI, where they lease 120 acres of beautiful open pastures. They are a pasture-raised poultry farm that raises non-gmo egg-laying hens, broilers and they have recently added turkeys to their flock. DaSilva focuses on sustainable farming practices by rotating their birds through their chemical-free pastures, and they do not give their animals any hormones, synthetic feed or antibiotics.

It’s Tuesday at 7:30 a.m. My mission this morning is to thicken a mushroom sauce, made from 80 pounds of mushrooms, shallots, garlic, thyme and other spices, that started cooking the night before. As I arrive, the roasted mushrooms have been drained, and the flavorful liquid is almost boiling. To my right, fresh basil and — guess what? — more shallots are being coarsely chopped for our plum tomato and basil sauce. Seventy years ago, our Jaju started a Polish food business with his brothers and sisters in Western Massachusetts—hand-crafting pierogi, golabki, and kielbasa for their community. Fast forward to the ‘90s and you’d find us, Vanessa and Casey, spending our weekends cutting, stuffing, and sealing pierogi in the back kitchen alongside our elders. Pierogi was a typical item on our dinner plates, something we took for granted. When we moved out to Boston for school and work, pierogi became more difficult to come by and we had to wait for deliveries from our mom. Friends talked of having to buy the mass-produced pierogi to get their fix! For us, that just wasn't okay.
